Clean Birthday Cake/Clint 2nd Birthday


The day I found out I was pregnant with Clint was the day I will never forget.  After loosing a baby 4 months before and getting threw that as a couple the idea of being pregnant again was both exiting and scary.  Making it into the second trimester was a big milestone and than all the what if's came also.  Will I stay home? Who will the baby look like? Natural delivery or C-section? Can we live on my husbands income alone? How do I go from working 50 hours a week to staying at home with a new born?  The list of things that went threw my mind as the day got closer to meeting this wonderful child got longer.  But the first time I saw Clint  nothing else mattered everything happened in God's timing and slowly we found a new "normal".

He has become such a little man so smart and ready to take on the world.  He loves diggers and trucks, well just about anything he can push in the dirt pile.  So of course his cake looked like a pile of dirt with "eses" on it meaning excavators.  Close family and friends at our house to share this special day with us.  With cousin Keith having a list of things he can not eat I found a recipe for a cake I made for just him.

As I make it a life style to eat clean and only fuel my body with food that will give me the best energy I skipped on cake.  No one is going to remember who had cake and ice cream and who did not.  it was about creating memories and sharing time with each other.  So normally I would of had cake with everyone and then once everyone would leave I would help myself to more.  Not this time everyone left and so did the food I did a "clean sweep" meaning any pop, ice cream, cake, and frosting left over went into the garbage can.  I would never been able to do that with out drinking my shakeology.  Here is the recipe I used to make a clean birthday cake

Ingredients:
1 cup of whole wheat flour
2 Teaspoons of baking powder
2 egg whites
1 Teaspoon of olive oil
3/4 cup of unsweetened apple sauce
1/3 cup of honey
1 tablespoon of vanilla
1 cup of all natural raspberry jam
2 cups of powder sugar

Directions:
Preheat oven to 350 degrees, spray one 9" round cake pan with olive oil.  In a large mixing bowl combine the first 7 ingredients and mix on low for 30 seconds.  Poor in cake pan and bake for 25-30 minutes.  Allow to cool than run a knife around the edge to separate the cake from pan and remove.  if you would like a second layer just double this recipe.  To make frosting simply mix together the jam and powder sugar.

I enjoyed being in the kitchen before eating clean and still continue to enjoy time in the kitchen, the only difference is what I'm make and creating happens to be good for my body and my families health.  If you would like more info on how to stay on track and what clean eating is all about message me and we can talk.
