Clean Eating Super Bowl Dishes

A can't say I'll be watching the game for who is playing rather for the commercials however I wanted to provide a few recipes of different items you can make and take or make and serve at your home.  Always keep in mind how you want to feel Monday morning the super bowl is now being labeled as the second biggest day out of the year that others over eat on.  So let's create a plan before time, pick your recipes, shop, prep, and be ready to enjoy the game with healthy choices being made.

Ingredients:
1 pint of fresh strawberries (washed and cleaned)
8 oz. of Greek yogurt
1/4 cup of chocolate chips
3 oz. of raw honey

*Take yogurt, chocolate chips, and honey mix well, save a few chips to place on top and serve

Ingredients
2 medium tomatoes, diced and seeded
2 tbsp fresh cilantro, chopped
1-2 tbsp lime juice
2 cups guacamole
2 tbsp green onions, chopped
 
For the sweet potato chips
3 large sweet potatoes
3 tbsp melted coconut oil
1 tsp salt
 
For the meat
1 medium yellow onion, finely diced
1 tbsp coconut oil
1 green chili, diced
1 lb. ground beef
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp ground cumin
1 tbsp tomato paste
12 oz. canned diced tomatoes
1 tsp salt
1/2 tsp pepper
 
Instructions
  1. To make the sweet potato chips, preheat the oven to 375 degrees F. Peel the sweet potatoes and slice thinly, using either a mandolin or sharp knife. In a large bowl, toss them with coconut oil and salt. Place the chips in a single layer on a rimmed baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.
  2. While the potato chips are baking, start preparing the beef. Melt the coconut oil in a large skillet over medium heat. Add the onion and chili to the pan and sauté for 3-4 minutes until softened. Add the ground beef and cook for 4-5 minutes, stirring regularly. Add the garlic, diced tomatoes, tomato paste, and remaining spices and stir well to combine. Bring the mixture to a simmer and then turn the heat down to medium-low. Cook, covered, for 20-25 minutes, stirring regularly.
  3. Stir the chopped tomatoes, lime juice, and cilantro into the beef mixture. Adjust salt and pepper to taste. Remove from heat.
  4. To assemble the nachos, form a large circle with the sweet potato chips on a platter. Add the beef mixture into the middle of the circle, and then top with guacamole and green onions.

5 Layer Greek hummus dip

Ingredients:
24 oz plain hummus
3 tablespoons of fresh dill
1 1/2 cups of plain Greek yogurt
1 cup of crumble feta cheese
4 oz of black olives
1 cucumber peeled and diced
1/2 cup of red onions chopped

Directions:
Mix hummus, dill, & Greek yogurt in a small bowl and then layer your serving dish with it and then top with remaining toppings.  I put a little extra fresh dill on top for looks.

Creamy Chicken Avocado Pasta


It's hard to believe this pregnancy has 3 weeks left.  To be honest every time I'm pregnant the thought of cooking chicken in general is not something I loo forward to.  However this recipe did not require a ton of time in the kitchen and was very creamy with lots of flavor.  With the launch of the 21 day fix extreme my goal was to help others find recipes that are simple, tasty, 21 day fix approved and with little clean up.

This is it!!

 

Ingredients:

6 ounces pasta, we used whole wheat spaghetti
1 large ripe Avocado, pitted and peel removed
1 tablespoon fresh lemon juice
 2 dashes of garlic powder
1/4 cup chopped fresh cilantro (optional I went without)
 shake of salt
Freshly ground black pepper

Directions:

1. Bring water to a boil in a medium sized pot. Salt the water and add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.
2. While the pasta is cooking, make the sauce by placing the avocado, garlic, lemon juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy.
3. When pasta is done cooking, drain and place pasta into a large bowl. Add the sauce to the pasta and toss until pasta is well coated. Season with additional salt and pepper, if desired. Serve immediately.
Note: This pasta dish is best eaten the day it is made.

Our family loves breakfast and there is just something about the weekends and spending a Sunday morning in the kitchen.  Music playing, relaxed without a set schedule and time to spend creating a great breakfast.  I know this is how we tend to roll and this recipe is a hit for everyone.  This recipe is very simple also so no need to feel like you need to be a chef in the kitchen in order to make a clean eating breakfast like this one.

Broccoli and Ham breakfast Quiche
 
 
Ingredients
  • 1 cup low-fat cottage cheese
  • 2 cups liquid egg whites
  • ½ cup broccoli, cooked + chopped
  • ½ cup extra lean ham, diced
  • ½ cup reduced-fat, shredded cheddar cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
Instructions
  1. Preheat oven to 375 degrees. Mix all ingredients in a large mixing bowl.
  2. Spray 9½-inch pie dish with nonstick cooking spray and pour ingredients in.
  3. Bake for approximately 45 minutes or until center is just set.

Boneless Buffalo Chicken Wings

Over Christmas a family member had made this same recipe and I could not wait to have it again.  As someone that use to work in the restaurant industry regular chicken wings just don't appeal to me.  However I LOVE spicy!!  And this recipe gives you the feeling of spicy and you’re eating something you should not be eating yet the base of it is cauliflower.  Give this a try on your future game days along with some homemade dressing you could use for the rest of the week.
 
Vegan Buffalo Chicken Wings
 
 
Ingredients
 
1 head of cauliflower, chopped into pieces
1/2 cup flour (I used whole wheat)
1/2 cup milk
2 teaspoons garlic powder
1 teaspoon salt
1 cup Frank's Red Hot Sauce
2 tablespoons canola oil
 
 
Instructions
  1. Preheat oven to 450 degrees.
  2. Mix together the flour, milk, garlic powder, and salt to form a thin batter.
  3. Coat the cauliflower pieces in the batter and place on a shallow baking sheet.
  4. Bake for 18 minutes.
  5. While the cauliflower is baking, heat the hot sauce and butter together over low heat until the oil is warmed.
  6. Toss the baked cauliflower gently in the hot sauce mixture.
  7. Return to the baking sheet and bake for another 5 minutes.
  8. Serve with ranch dressing or blue cheese, for dipping.

Living in Pa today the temperature happens to be around 15 degrees!!  And snow blowing around the house, to sit down and write a blog about the sunny warm weather is refreshing.  I know for a lot of families once you become parents family vacations go out the window they just happen to get cut in the family budge.  How would it feel to help better others with their own quality of life while earning this free trip?

So why is no the time to become a beachbody coach?

So with this crazy thing called helping 3 people a month also comes free customer leads each month.  I wanted to share a post from a coach on my team from this past week, she is not just anyone she is, my sister.

"I love my business and God is so faithful! Story time!
Last night I was paying bills online and also wrote out the check for our tithe so that I could take it with us to church this morning. We set aside a regular percentage that we give to God's work through our local church. Of course, coming off of Christmas and a birthday, writing checks this time of the year can feel like "one more thing"! But tithing is a given for us and I don't give it a second thought.
When you are a Team Beachbody coach, there are certain milestones that you can reach each month. When you do, you receive bonus customer referrals the following month. These are people who may have watched an infomercial or whatever and decide to improve their health and you are assigned to them as a coach. This is a great company and I appreciate their generosity towards us coaches as we build our own businesses. Anyways, overnight I had one new referral and earned commission from that and it was a nice bonus this morning. But then there was another referral that ordered quadruple the typical referral order! I was blown away AND thankful this morning when I woke up to a GREAT surprise this morning! God supplies our needs and we never know how HE may choose to go about it!
I have been coaching for 10 months now I really, really enjoy working with my challengers! It is very rewarding to wake up each day and be able to hit the ground running with helping others who are making great strides in changing their own health. I so enjoy people and their stories and giving them the tools and cheering them on along the way! The results can be pretty fantastic! It is because a lot of what I do goes back to the basics of eating right and exercising. We just add in knowledge, accountability and encouragement and then things really come together. I love my challenge groups and can't imagine life without them!"
