Crock pot Cashew Chicken

facebookCrock pot Cashew Chicken (serves 2)

I have to say I enjoy the kitchen but not everyone does and I always hear I need quick and simple recipes.  So yes another recipe in the crockpot will meet those requirements.  Enjoy eating clean and it should not be a "bad thing" I 'm always looking for new recipes and trying things different ways.

Crock pot Cashew Chicken

Ingredients:
  • 2 chicken breasts, cut into smaller pieces
  • 1-2 cups frozen broccoli, cut into bite-size pieces
  • 1 cup carrots, sliced
  • 1/2 cup unsalted cashews
  • 1 tablespoon olive oil
  • 1/2 cup soy sauce
  • 4 tablespoons rice wine vinegar
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 garlic clove, minced
  • 1/4 teaspoon red pepper flakes
  •  pepper to taste
  • 1/2 cup low sodium chicken broth
Directions:
Place cut up chicken in the bottom, vegetables, combine remaining ingredients cover and place on high for 2-4 hours or low for 6-8 hours.  Easy clean up and a clean dinner that you did not need to spend the entire day making.  You can serve this by itself or with brown rice.

  2. So for the cashew chicken you would need to leave out the brown sugar and instead of chicken broth you would use just plan water and it would count for 1 red, 1 green, 1 blue. I hope that helps a lot of recipes that you enjoyed before or you find on the internet will need to be adjusted a bit for the 21 day fix
