Ingredients (serves 1)
- 5 oz raw boneless, skinless, chicken breast
- 1 tsp. of extra virgin olive oil
- 2 tbl. of fresh lemon juice
- 1/2 tsp. of paprika
- Sea salt and pepper for taste is optional
- 2 medium carrots, sliced, cooked, & hot
- 2 tsp. of raw honey
- optional add a few orange slices (not figured into nutritional guide)
Directions:
Preheat oven to 375 degrees
Place chicken in small baking dish, drizzle with oil and lemon juice and sprinkle with paprika (salt & pepper). Bake for 20 minutes or until the internal temp. comes to 165 degrees. Drizzle carrots with honey and serve.
tips/modifications:
For a 400 calorie meal add 1/2 cup of cooked brown rice on the side. For a 500 calorie meal increase chicken to 6oz. and add 3/4 cup of brown rice.
