Clean Eating Pecan Pie

This recipe always makes me think of my mom as this is one of her favorite recipes!!  It started out I was going to make the individual tea time tassies but then realized looking at the clock I need to speed up production.  This recipe would be very simple to convert if you want.  So here it is:

Clean Eating Pecan Pie

Easy Pie Crust Ingredients:
 
1 1/2 cups whole wheat pastry flour
3/4 tsp sea salt
1/2 cup room temp. coconut oil
2 COLD water
 
First add flour, salt, oil, mix well I like to do so with my hands so I know the oil is mixed in well before adding the water.  If once you add the cold water it feels too sticky feel free to add a little more flour.  You want the crust to come together on a dough form that will be easy to roll out and add to a 9" pie dish.
 
 
Ingredients pie filling:
 
2 tsp butter
1 1/2 cup chopped pecans
3 eggs, beaten
1 cup real maple syrup
1/4 cup raw sugar
1/4 cup coconut sugar
1/3 cup melted coconut oil
1 tsp vanilla
1/2 tsp sea salt
1 tbl whole wheat pastry flour
Preheat oven to 350 degrees.


On the stovetop, melt the butter in a pan on low heat. Add the pecans and stir for about 5 minutes or until nuts are toasted.

Mix together beaten eggs, maple syrup, raw sugar, coconut sugar, coconut oil, vanilla, sea salt and flour. Stir in nuts. Pour filling into uncooked pie crust. Bake for 45-50 minutes or until filling is set. Cool on a wire rack.

Ingredients:

6 large eggs
1 large bell pepper
1 cup of fresh spinach leaves
4 ounces of feta cheese (goat would work well also)
Salt & pepper

Individual Baked Egg Breakfast

Directions:
Slice the bell peppers into one-inch slices, beat the eggs, mix in the spinach and cheese, and bake until perfect.

Preheat the oven to 350° F.

Slice the bell peppers into one-inch rings - go for four rings. Coarsely chop the spinach. Crumble the cheese. Beat the eggs with a small amount of water (less than a table spoon per egg used).

Place the bell pepper rings on a griddle on low heat (about 250° F) or a frying pan on low. Drizzle a small amount of olive oil into each ring. Pour the mixed eggs into each ring with just enough to completely cover the bottom of each ring with about 1/8-inch of egg. Let it cook until the egg is well set.

Transfer the bell pepper rings to a baking tray covered in baking parchment. Fill the bell pepper rings about halfway with eggs, then add generous amounts of spinach and crumbled cheese. Fill the bell pepper rings up to almost the top with eggs and add more spinach and cheese. Season lightly with salt and pepper.

Today while really sitting and thinking about helping others in the year 2015 it hit me FOCUS. There are so many ways to lose weight and get in shape however very few ways support you day in and day out. That is where an online accountability group comes into play. I personally will be leading you step by step as you go through the program you selected such as T25, Insanity Mas 30, The 21 day Fix, P90X3, and so on.  
 
It's crazy to look back at the last December I was committed to creating a healthy lifestyle and inspiring others to do the same for 2014. My goal for 2014 was to personally help transform 50 individuals lives within online challenge groups. And from that to see the ripple affect has been very rewarding. 2015 is no different my goal is still to inspire others to not just "live" life but "live life to their fullest potential".

 For me this exclusive VIP closed Facebook group is not just another start and stop kind of place. It's a place of FOCUSING on bettering yourself from the inside out. Taking time weekly to invest in 30 minute at home work outs, eating clean, pushing yourself to be a little uncomfortable in order to reach your personal goals, supporting others going through the exact same daily struggles.

Christmas is one week away!!  Can you say goodies everywhere you turn? I mean really I head to the grocery store, at the office, out to eat, with family, friends, I could of picked up an extra 3,000 calories this week alone. Thank goodness for "treats" such as this one.  It's taste amazing and hard to believe it's healthy.


  • 1 scoop chocolate Shakeology
  • 1 cup non-fat milk,almond milk, soy milk or rice milk
  • 1 tsp. caramel extract
  • 1 dash sea salt
  •  Ice to taste

Good morning, so yesterday kicked off our Insanity Max 30 test group and the question about yogurt came up very quickly and for sure this is very common so I thought it would be helpful to sit down and write out what to avoid.  Let's face it clean eating is not always easy trust me when I started and I went to the "yogurt" section I just assumed they were all healthy I mean its yogurt made with dairy.  But here's the thing in today's world what the companies put in this "healthy food is just plain scary.  The fact that our culture is designed around "calories" and not quality is just plain sad.  So yes in order to keep the chemicals out of your yogurt the yogurts with a little more calories are actually going to help you as the day goes on.
 
 
So do I a favor after reading this blog go check your fridge and see if any of these ingredients happen to be in your yogurt?
 
First off never go by “low calorie” always turn the container over because more than likely it will contain the following:
Artificial flavorings
Sucralose (which means artificial sweetener)...
Acesulfame potassium (found in most diet drinks)

Corn Starch
Sugar being close to the top for ingredients 
Side effects to eating artificial sweeteners or flavoring, sucralose, acesulfame
 
 
Sweeteners simulate the sweet taste of sugar without all the calories found in table sugar and other calorie-laden sweeteners, such as high-fructose corn syrup. Concerned that the American obesity epidemic was occurring simultaneously with increased use of artificial sweeteners, Yale University neurobiologist Qing Yang conducted a review of the scientific literature on sugar substitutes and their effect on appetite and weight. Summing up her findings in the June 2010 issue of “Yale Journal of Biology and Medicine,” she cited strong evidence from previous studies showing a link between a person’s customary intake of a flavor and the intensity of his preference for more of that flavor. In other words, the sweet taste imparted by sugar substitutes tends to increase the yearning for more of that sweetness, which leads to overeating. She concludes: “Un sweetening the world’s diet may be the key to reversing the obesity epidemic.”


 
Chobani brand happens to be the one I really like plus the texture is great, its nice and creamy.
So what does all of that mean going back to yogurt?  So what you thought was healthy snack ended up being a food that would lead your body to crave more instead of stratifying hunger.
 
So now what?
Have you ever tried to eat plain Greek yogurt?  I still CAN NOT do it after a year and a half of eating clean.  Here are a few recipes I found that work wonders:
 
 
The kids and I enjoy an afternoon snack of yogurt and berries as well.  Depending on the time of the year I use either fresh or frozen.  Also taste amazing if you add fresh Granola on top.

Is team beachbody a MLM business?


Yes- Before I get into what MLM stands for I will share why it was created out of a need.  So Beachbody for years now has had a platform with infomercials when it comes to at home fitness.  Not unless you live under your bed you have seen one for Insanity, T25, 21 day fix, P90X, and so on.  What the CEO of beachbody Carl Daikeler found was two things, people were having amazing transformations and sharing with others and in order to end the trend on obesity having a support system in place was a must.  It wasn't just about selling a bunch of programs and them never getting opened or never seeing the person finish week two of the workout.  Also there is this little hidden gem called shakeology that is only available from a coach so rather than putting shakeology on the counter at GNC and having a 16 year old high school girl try to explain why it's not a protein shake and all the benefits.  Let the customers create an income from something they already use and love. I've met some of the most amazing ladies because of beachbody and we truly work together as a team!!




What does MLM mean?

Many types of products, rather than being available on store shelves, are sold through a distribution technique known as network marketing or multi-level marketing (MLM). In this type of distribution pattern, independent salespeople represent a parent company and are paid on commission based on the volume of product that they sell. It is sometimes difficult to distinguish reputable MLM business from illegal pyramid schemes.  

So what is a pyramid?

A pyramid scheme is an unsustainable business model that involves promising participant’s payment or services, primarily for enrolling other people into the scheme, rather than supplying any real investment or sale of products or services to the public.  A scheme is deceiving, and not at all transparent. They present one thing, and give you another. When you want out, you find you are usually stuck with a huge loss of time, money and effort. I am 100% transparent, as are my products and what they can do. And if you ever wanted out, you leave with no strings attached, as a customer or a coach.  The money invested to become coach is 40.00 bucks.

How much work is involved?  

This is a business that takes time, hard work, and dedication to succeed at. The very day most people start working for someone else they receive “instant gratification” from their work and they get paid weekly, bi-weekly, monthly, for their work. So we’re virtually programmed to think, “As soon as I work, I should make money.” I’d say 90% of people that come into beachbody or any MLM think that way. If you’ve ever started a business from scratch then you know that you will typically NOT receive instant gratification and that it takes time, hard work, and dedication to succeed and make money. But here is the crazy cool part about being the CEO of your own business your able to decide how little or how much you pour into this business.  IF your goal is to simply help a few friends, coworkers, and family you can do so.  If your goal is to be in the top 3% of the company it's going to take work but the rewards will exceed what you thought was possible.

My thoughts on MLM as a traditional business owner?

So first off do you have any business skills to be successful with beanchbody? No.  However coming from a traditional business owners side MLM businesses are BRILLENT. 
*Zero overhead
*Zero employee's (just mentoring other CEO'S)
*Zero working cost insurances, payroll, deductions on equipment, repairs done on the building you run your business out of.
*Work from any location
*Work your own hours

What I know for sure about our team


Here is the thing I know for sure I’ve been the employee, I’ve been the boss of employee’s, I’ve been the landlord, I’ve pretty much been in a lot of different situations.  However beachbody is different in the fact that yes it’s a “team” but everyone is working together. Monday morning doesn’t come and you need to have a talk with so and so because they aren’t carrying their weight or they did not complete the task at hand like you would with an employee.  You’re not working for someone else because you’re your own boss and can determine your success based on the time invested. Monday morning comes along and I have a great idea I run with it not need to clear it by someone else.  In other cases a lot of times if you work hard you’re left feeling the short end of the stick.  I truly am inspired every day by those on our team.  Some work full time, part time, stay at home moms.  Also our focus is truly on helping others and how we can become better people to serve those around us.  It’s super cool and very rewarding.  Maybe you’ve been hurt in the past with MLM business or you thought only people at the top make money, or whatever thoughts you had before about MLM business, I ask you to have an open mind and try something new if it’s not right for you, no worries!!

This all sounds great but how or where do you even start?  Well that's the great part about our team you're not left out on a limb to figure it all out on your own.  Once you sign up as a coach you can expect to be enrolled into a coach basics group where you will be given the tools to learn the basics, how to run affective challenge groups, how to talk about shakeology, how to share not sell, how to use the back office, weekly team calls to stay plugged into (location doesn't matter), and being surrounded with others that are just starting out as well.  From that training on expanding your network, what social media plate forms to use, how to manage your time, attraction marketing, and how to learn skills to manage your own team that will start to evolve.

What a differance a year can make

So to sit down and write a blog is just not my thing so hang tight with me because I truly believe people can benefit from what I do as a coach.  Some may know my story while others would like a little background.  May of 2013 I found it very hard to lose the baby weight after baby number two I tried everything nothing was working.  I was working out like crazy but truly it wasn’t enough I joined an online challenge group and jumped in with two feet embracing clean eating, committing to a 30 minute at home workout, accountability, and replacing one meal a day with shakeoology.  I could not believe the success I had at the end of 90 days I had lots 40 lbs. and felt amazing. 


My personality is seeing and believing in others when they don’t see it.  I enjoy and get a lot out of helping others.  My background before being a stay at home mom was waitressing so you could say I enjoyed this for similar reasons however I hate the hours, I did not want to miss out on raising our kids, hated knowing I was building someone else future, and enjoy working hard but on my own terms.

 


I’m just a small town girl with big goals and dreams with that being said I’m willing to work for things in life.  My goal for 2014 was to personally help 50 people transform their health for the better.  You could say I surpassed that goal and continue to help others thanks to dedication and time invested in learning about social media plate forms such as my blog and like page.  I just show up every day in the morning and at night when the kids go to bed willing to share my story and invite others to join.

So let’s talk money it can be a sensitive subject with many but what I know at my core is not only can I help with giving someone a healthier life day by day but helping with more financial independence.  Being able to see others on my team walk away from 30 plus hours of working out of the home to the mom that just wants to earn an extra 100.00 a week to offset the cost of raising a family has been equally rewarding.  I don’t know all the answers and fail every day but one thing I’m not willing to do is give up.  And at the end of the day and as 2014 ends that was simply enough. 

In the month of December when most are worried about paying for Christmas being a beachbody coach has been a blessing.  I ran some numbers yesterday and the income from last December to this year increased by 416%!!!!  The crazy cool thing is it doesn’t cap out this is music to a person that is not afraid to work hard for one to two years of my life.  The freedom of knowing when our third child is born I don’t have to rush back to a job only to make x amount of dollars a week and not be able to breastfeed my child.  Also missing out on watching our other two grow up because they are only little ONCE.  The freedom to pick up this past week and drive 1.5 hours away just to go to my two favorite grocery stories without checking in with anyone.


Plus knowing at my core I’m able to see someone start at the lowest point in their life with zero confidence to walking around enjoying life again.  I know this is my purpose and for sure I struggled at first with following that gut feeling this was for me but somehow God always shows up and equips you with the tools needed to push past hesitations.

Here is what I know about “scrams”- they are deceiving people and have a dark side you can’t see.  They present one thing and give another.   When you want out, you find you are usually stuck with a huge loss of time, money and effort.  I’m not sharing  “products” that are not easy to say no thanks it’s not for me or signing up as a coach and saying 3 months in this is not right for me.  So if you ever wanted out, you leave with no strings attached, as a customer or a coach.  If your focus is on helping others your level of success will follow.

I promote products that help you get in better health. I empower you to help others do the same. And when you help others live healthier, we BOTH are rewarded. I offer nutrition that makes your body run better without chemical dependence or manipulation.  So when you take a look at your life where will you be 5 years from now?  Will just paying the minimum amount due on your mortgage and working your butt off for someone else’s future be in your cards?  Or as a stay at home mom wanting more freedom with your family’s time still seem to be a struggle?

There is something about making goals, setting goals, writing them down, and looking at them every day.  I’m not sure if others are driven by a goal but for me personally it pushes me on the day I don’t feel like it, the times it would be easy to give up.

I have to share what my goals looked like for 2014

 


Here is what I learned in the last year I’m still as excited about sharing this opportunity with others whether it’s by helping someone reach their fitness goals or create more financial freedom.  Over the holiday weekend my Diamond coach and also sister sat down and made a few YouTube videos sharing more in detail what a coach does?  Who coaching is right for?  And how this opportunity can change the direction of your future, she spoke about starting out 9 months ago and how being a beachbody coach has allowed her to replace her income of working 30 plus hours out of the home every week.  And since that point I’ve been really thinking about goals for 2015 and what they should be centered around.

2014 my main focus was to help 50 people live a healthier lifestyle my focus is still always to help others live a healthier life but truly making a shift and focusing on helping other woman that feel stuck just like my own sister did.  Having the tension of her working out of the home 30 plus hours a week truly took a toll. 

Here is the thing I’m going to be honest I make daily mistakes and for sure don’t have all the answers.  However I’m willing to show up every day and put my focus on failing forward and learning from it, staying committed when things get a little tough.  In the end being successful at coaching is structured around just that.

I’m an introvert and you will never catch me being the center of the party I prefer small group settings and one on one conversations.  I truly started out with 10 people to invite to my first challenge group.  My husband did not support my choice, my kids still don’t sleep well, and we run a tradition business so my days are full however over the past 15 months I’ve created a system that is easily duplicable if you’re willing to step out of your comfort zone.

First goal going into 2015 is to bring 4 women on my team home from their job.  It might be a newly married mom that wants the chance to raise her kids and still needs to create income.  It might be a mom that would like to have baby number 2 but the thought of daycare out weights the chance for her to do so, or the person that works a crazy amount of time but can never seem to get ahead.

Focus beyond helping others is knowing down at my core that this is what God wants me to be doing in 2015.  Looking daily for guidance and willing to see how things unfold.  Just a mom on a mission

 
 

There is something about a year coming to an end in 30 days everyone sets out wanting better health and more freedom.  What if you could mix the two together?  I’m not any kinda fitness pro or carry any degrees in nutrition however I’m willing to stay true to who I am and what how life unfolds.

I know Thanksgiving is over buy come on this time of the year I enjoy being in the kitchen and baking however feeling blah and less energy is not the best combination.  I'm so thankful for finding recipes like this one and applying it to my recipes and sharing it with others.



Healthy Buckeyes


INGREDIENTS

1(14 ounce) can cannellini beans, drained + rinsed
1/2 cup unsweetened applesauce
1/2 cup pumpkin puree (may use sweet potato or butternut puree)*
2 tablespoons coconut oil
1 tablespoon vanilla extract
1 cup creamy peanut butter
Pinch of sea salt
10 ounces dark or semi-sweet chocolate, melted (use vegan chocolate if needed)

INSTRUCTIONS


Line two cookie sheets with wax paper.
In the bowl of a food processor, add the cannellini beans and puree until mostly smooth. Add the applesauce, pumpkin, coconut oil and vanilla. Puree until completely smooth and creamy, about 2 minutes, scrapping down the sides if needed. Add the peanut butter and salt, process another minute.
Scoop 1/2 tablespoon size amounts of dough out and roll into a rough ball. Place on the prepared cookie sheet. Repeat with the remaining dough, cover the pans and place in the fridge for 15 minutes.
After 15 minutes, remove the balls from the fridge and roll them once more between your hands to smooth the balls out. Stick a toothpick into the top of each ball. Cover the cookie sheets and place them in the freezer for at least 45 minutes, but not too much longer than an hour.
Just before removing the balls from the freezer melt the chocolate over a double broiler or in the microwave.

Working with one ball at a time, dip the frozen balls into the chocolate leaving a small opening at the top so the peanut butter can peak out. Place the balls back on the cookie sheet. Repeat with the remaining balls. Store in the fridge until ready to eat.

PREP TIME: 20 MINUTES

TOTAL TIME: 1 HOUR, 15 MINUTES

YIELD: 25-35 BUCKEYES

Depending on whether you purchase the bag of shakeology or the packets it's still a 30 day supply of the healthiest meal of the day.  I always recommend if it's your first time to purchase to buy it as a mixed box (packets) so your able to sample 3 flavors at once chocolate, vanilla, and strawberry.

  • 1 scoop Chocolate Shakeology
  • 1 cup unsweetened Almond Milk (can use skim, rice, or soy milk if desired)
  • 1/2 cup canned pumpkin unsweetened
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • Ice (optional)

    Thin Mint Treat
  • 1 scoop Chocolate Shakeology
  • 1 1/2 cups cold water
  • 3 drops peppermint extract
  • Ice (optional)

    Shakeology Cinnamon Roll
  • 1 scoop Chocolate Shakeology
  • 1 cup ice
  • 1 cup unsweetened almond milk (can use skim, rice, or soy milk if desired)
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract

    Mocha Madness
  • 1 scoop Chocolate Shakeology
  • 1 cup coffee, brewed, cooled
  • 1/2 cup unsweetened almond milk
  • 1/2 cup ice
  • Add cinnamon and nutmeg for a cappuccino flavored shake (optional)

    Peanut Butter Cup
  • 1 scoop Chocolate Shakeology
  • 3/4 cup water
  • 1/2 cup unsweetened almond milk
  • 1 Tbsp. all-natural peanut butter (or almond butter)
  • 1/2 cup ice

    Snickers Blizzard Shakeology
  • 1 scoop Chocolate Shakeology
  • 1/2 cup unsweetened almond milk (skim, soy, or rice milk if desired)
  • 4 oz. water
  • 1 tbsp. PB2
  • a handful of walnuts
  • 12 almonds
  • 1 tsp. almond extract

What is Insanity Max 30?



So a little background on myself, I started in a challenge group last May of 2013 and started with a program ChaLean Extreme had an awesome transformation after not being able to lose the baby weight from our second daughter. After that I went on to do T25 and then Insanity last fall at this same time of the year. I know some of you have completed Insanity and some have not let's just say it's hard even as a health coach finding the time to commit to 60 minute workouts in month 2 was hard. I did it and had the best definition I ever had in my abs (after 2 C-sections).   Shawn T is all about working the core and Max 30 will not let you down in that area. If your core is an area you struggle with and you hate doing "traditional" sit ups this will be a win.
 
What is Insanity Max 30?


 
So of course I'm thrilled to learn more about this program based on just the fact that the workouts are 30 minutes long 5 days a week (not 6) and the program is 8 weeks long broke down into two sections or blocks however you want to refer to them.
So unlike Insanity for the entire program max30 will have a camera on a  modifier.


What type of training is it?

 Tabata training- meaning you start very intense in a move and goes less strong to complete.
First month on you go hard for 20 seconds rest for 10 seconds. Each "set" of moves lasting 4 minutes 30 seconds.
Unlike Insanity you don't have a fit test every two weeks rather each day you try and max out your time.

Month one workouts

 -Cardio challenge- It's like a fit test and your maxing out in cardio
-Sweat intervals- all cardio as well and you sweat the entire time
-Tabata power- designed to focus on your core
-Tabata strength- total body building strength
-Friday fight round- Since this is a 5 day program Friday is all out Insane workout for 30 minutes.
Optional in month one for Saturday morning- a workout called pulse designed on improving balance, core, and form


Here is the thing this is not meant to scare you out of doing the program but rather to stretch your mind in what you’re capable of doing. More than likely your mind is the first thing to talk you out of trying something new. Keep in mind you have a modifier. And if your workouts don't give you challenge everyday your body will plateau.



Month 2 workouts

-Max out cardio
-Max out sweat
-Max out power
-Max out strength
-Friday fight round 2

Month two the times go from 4 minutes 30 seconds to 5 minutes 30 seconds.
*Note the goal is to max out and increase your time. However when you max out the program is not over. You take a break and jump back in.

Shawn T really recommends doing the program 5 days straight and taking 2 rest days, your body is going to need it. Unlike Insanity you won't have a recovery week. This will allow your body to fully recover and become stronger for the following week.
