Round 2 of the 21 day fix is in full affect I'm feeling more confident in branching out and making new recipes. So this bad boy was underway today, This is an easy recipe to follow even if your "not a cook". the prep time on this is not long at all and if your a busy mom or working mom this recipes can totally be prep at the beginning of the week and put in the oven to be baked. The house smelled amazing while making this recipe the kids loved it as well.
4 green bell
peppers, tops removed, seeded
1 lb.s of
ground turkey
2
tablespoons of olive oil
½ cup
chopped onion
1 zucchini
chopped
½ red bell
pepper
½ yellow
bell pepper
1 cup of
fresh spinach
1/2 cup of cherry tomatoes cut in half
6-8 oz. tomato sauce
Italian
seasoning for taste
Garlic powder
for taste
Pepper for
taste
American slice cheese
Directions
Preheat oven to 350 degrees
Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
Return peppers to the oven, and continue cooking 15 minutes.
If you want to add the cheese I broiled it for the last 5 minutes for the cheese to be a little golden brown on top
