It's that time of the year again!! I mean you can't go to work without being hit
with this goody or that treat, extra holiday drinks, Halloween candy
EVERYWHERE!! How to stay focus on your
nutrition when the world seems to check out until January 1st. This is it!!
Is it 100% clean? NO however making these for the weekend get together
will be a much better option than throwing in the towel. Do you have a Sunday
brunch coming up soon? This recipe would
be perfect. For sure if you're trying to
lose weight I would not recommend making these on a Monday for no reason
because let’s face it temptation is not easy and if you’re like me even if they
tend to be on the healthier side I would eat the entire batch if left at the
house.
Ingredients:
1 cup of organic pumpkin
2 cups almond flour
1/2 cup raw honey
2 eggs
1/2 cup almond milk
2 tbsp cinnamon (extra optional sprinkle on top)
1 tsp baking soda
Frosting ingredients:
8oz cream cheese
2 cups of powder sugar
Directions:
Preheat oven to 375. Combine all ingredients in a blender. You can mix by hand, but I prefer to blend it. It make the almond flour finer and provides a better, smoother texture for the cupcakes. Less grainy. Pour the batter into 12 muffin tins. Bake for 25 minutes, or until a toothpick comes out clean.
Frosting:
Directions: Combine all ingredients in a large bowl. Mix until completely smooth. Pipe on cooled cupcakes. Enjoy! Pampered chef makes this great tool I used for frosting the cupcakes.
