Pumpkin Baked Oatmeal

Pumpkin Baked Oatmeal

Well hello Fall!!  Yesterday made fall official for the year 2015, this time of the year I start to focus on end of the year goals life, business, family, fitness, and all the things that fall between the cracks of the day.  Three weeks ago my son start preschool and of course like any mom will tell you somewhere I blink and he want from needing help with things to being a little man.  I'm thankful he is doing well, change is hard for him.  The kids go a few mornings a week to childcare so that I can work for our traditional business and they truly enjoy it.  However getting out the door in the morning is a challenge!  Someone (out of three kids) is always crying, someone does not like what is for breakfast, someone needs SOMETHING!!  So when I came across this fall recipe I wanted to give it a try, BOTH kids loved it and asked for more.  I personally like it because it falls into the 21 day fix meal plan.  If you're someone that follows this system this recipe would could for one yellow per serving and half a blue container.   The recipe makes 12 servings also I was able to make this recipe from start finish in TEN MINUTES!!  I used walnuts because that was the nut I had on hand in the house, pecans are a sweeter nut.

21 day fix meals

Ingredients
  • ½ cup walnut or pecans, chopped
  • 1 cup pumpkin puree my favorite place to pick this up is at Trader Joe's
  • 3/4 cup almond milk
  • 2 eggs
  • 1/4 cup coconut oil room temp.
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups rolled oats
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
Directions
  1. Preheat oven to 350°F. Lightly  spray with nonstick cooking (I like coconut oil) spray an 8-inch square baking dish.
  2. Spread chopped walnuts or pecans on an ungreased baking sheet and toast for 4 to 6 minutes or until fragrant and light golden brown. Cool on baking sheet.
  3. In a large bowl, mix together pumpkin, milk, eggs, coconut oil, maple syrup, and vanilla; beat until smooth. Blend in oats, toasted nuts, cinnamon, nutmeg, ginger, and salt; stir until mixture is well-combined.
  4. Spread oatmeal into prepared baking dish and bake for 20 to 25 minutes or until set and light golden brown on top. Allow to cool in the baking dish for at least 5 minutes before slicing. Serve warm with fresh fruit or pure maple syrup.

3 Day Refresh Results

I help others with getting start and back on track and wanted to share results from current customers and coaches on our team.

Unknown-
Excited here today!!! I know that we should not always be checking the scale. But I needed to be sure my 4 pounds loss from the refresh stayed lost. WELL - TODAY showed another pound gone after using the 21 day fix containers yesterday. Down 5 pounds in 4 days.
Packing my containers for work. Good attitude for the weekend.

Laura-
5.8 pounds and 1.5 inches!!! I'm ready to keep going to make my August 31st goals. It wasn't always fun, but I completed the refresh and I'm so very very glad that I did. I feel so excited.

Amy P.-
"Here are my official 3 Day Refresh results! I really want to preface my results with something first. I have always been a petite person but getting back to my starting size of 116.5 lbs took work. I ga...ined 45-50 lbs during each of my pregnancies. Clean eating, Shakeology, and the Beachbody workouts (mainly PiYo) got me back to my pre-pregnancy weight. It wasn't hard, but I was consistent and disciplined. I believe so much in these programs, especially for really busy people!

Now, my results for the 3 Day Refresh are 4 lbs lost. I also lost 2 inches from my waist and 1 inch from my hips. I've gained an appreciation for good and healthy food again, a realistic perspective when it comes to food portions, awareness of how much I used to eat unconsciously munching on snacks and my children's food. The Refresh really helped to break some unhealthy eating habits that I had picked up on my vacation a few weeks ago. I'm taking so much more away from these 3 days than just lost weight and inches. It is so worth the small effort to do the Refresh!"-Amy

90 days living on a farm

90 days living on a farm

Hey there!!  It seems like forever that I sat down and shared my life in a blog post!!  Next week will be 90 days that we moved from a 950 square home on a quarter lot to 2400 square home with 32 acres to have room to raise our kids.  Since moving our family of 5 we added two horses, 10 chickens, 4 pigs, and two goats!!  Oh and let’s not forget the one late night we saw a snapping turtle (he hasn’t been back around).  It’s been a total learning experience yes I grew up on a 40 acre farm but we only ever had horses and a few barn cats. Since moving the first night we brought our new horse home she got out and let’s just say we met the neighbors in a hurry.

Weekends before we would just leave and find things to do elsewhere!  Now instead waking up getting an early morning run in and sitting down to write out a to-do list of projects I would like to work on around the farm.  In the past 90 days we’ve had lots of company over and been able to share our home with others.  I love cooking and always new each of those “kitchen” items would be used some day.  In the kitchen the pantry has an entire section to hold all these random treasures from odd size serving platters to fun cloth napkins.

I’m not going to paint a picture that this wasn’t hard work and a lot of family time was missed while my husband was working and I was home with the kids in diapers.  But creating those memories now made all the sacrifices worth it.  Most nights we load the family up in the buggy take a family ride to feed the deer, check the fencing, check the property, and just breath.  The kids might watch 30 minutes a day of TV rather Josie and Clint are out doors “digging” up my flowers with the excavator and hauling it away with their toy dump trucks.  Growing up we didn’t even have cable till I was in 7th grade and I bagged my parents to get it, I would go to school and others would be talking about what they watched.  Looking back I’m thankful for being able to say “movie” night as a family of 5 was watched on a 13” TV rented from the local store.  I wonder what our kids will grow up and remember from living on a farm.
Clint is the same age I was when we moved to the farm I grew up on.  One of my first memories was my daddy riding his motorcycle up the back driveway and letting me ride in front of him.

In the last 90 days there has been soooo many things that needed replaced or fixed after the place being empty for 8 years from all new plumbing in and outside of the home thankful that my husband is hands on, owns an excavator, and my beachbody business.  All new gutters, all the fields mowed, fencing fix, new electrical system in the barn, barn scrapped and painted, stalls stained, new pipes in the barn, issues with the well water, all in all each project and unexpected issue is just part of moving to a place that hasn’t been maintained.  The grass was soooo long and wasn’t mowed once prior to us moving in June 1st this year.

For each project my little man is out there helping my husband with whatever he is up to!!  He has so many ideas and I must add good ideas!!  Clint is creating his own list of projects he wants to do on the farm!!  I can’t wait to see what the next 90 days brings!  Perhaps a few more animals!!  Yes we are getting cows as well!!  Clint really would like a pet turtle and talks about it every night at bed, so we will see!!  This is our crazy life and I guess I’m the zoo keeper!!

Cize Test Group

Cize Test Group

Hey There!!  Welcome to my blog where you will find clean eating recipes, motivation, and ways to better your health.  A little bit about myself before we jump into talking about Cize.  I'm a country girl by heart, I live life with a free sprite and run the other way when to much structure is given.  I married my husband 8 years ago we currently have 3 children age 3 and under!!  I've always been driven in life by doing things most see with little opportunity.  In our 20's my husband and I owned a grease collection business and had over 600 locations in the state of Pa to pick up a waste product and turn it into fuel.  We sold the business to a company out of the DC area a little over 2 years ago and continue to be entrepreneurs.

I came into beachbody 2 years ago just really wanting to lose the baby weight.  I felt defeated and was failing at losing it and my confidence was low.  I wanted to pay it forward and show other woman they too could do this.  So when I look at this picture of these lovely ladies in the first week of the test group working out and sweating for a bigger cause its a pretty cool feeling!  As busy woman I TRULY believe in craving out that daily time to invest mentally and physically into our health.  I swear sweating does a mind good at the same time.

Let's talk meal plan when it comes to Cize, it uses the same system as the 21 day fix as far as the containers go. This just makes life simple!!  Oh and tasty while getting healthy and losing weight.  Here is an example of what I share within my accountability groups.
cize test group

I have a few favorite recipes when it comes to this system of meal planning.
Chicken Caprese
Flank Steak
Beef Stew

In our household my husband would not be thrilled to eat chicken salads every night for dinner so these are just a few ideas on how to keep the family happy while creating a meal plan and not having to cook two dinners.

Before I show you a clip of what the Cize workouts look like I had to share where I spend a good chunk of the day.  Being outdoors with the kids whether its in the barn or the side yard.  So lets just say this workout is stretch for me!!  Give me weight training, running, or 30 minute cardio with at home fitness I'm good.  Cize is cardio but it involves dancing....Perhaps it will be like wine with time it only gets better?

So if you would like to feel more confident in your own skin, shred a few lbs, tone up, do so from at home fitness, give me four weeks of your time with checking in from an online closed facebook group lets chat.  Oh and we eat well also!!  No need to count calories its more so looking at nutrition and picking better options.

Cize Meal Plan

Cize Meal Plan

It's that time of the week where I sit down and plan out not only goals for the week but also what I will be eating.  Yes I know it kind of sounds crazy but it works.  How many times do you say to yourself this week is going to be better I'm going to set my alarm and wake up early?  Come Tuesday morning the pizza in the lunch room at work gets the best of you!!  I'm not perfect and those slip ups happen.  MY goal is to share with you a way to have a plan but stick to it as best as you can.  It's easy to get down on yourself and feel like you're in a rut!!  I'm here as you coach to shake you and wake you up and focus more on the solution then the problem.

So the part of the solution is to have a plan, shop for the foods needed, and prep for the week.  As a busy mom and business owner I rely on shakeology for one complete meal a day that helps my general health all around.  With the rising increase in health care and coverage my goal as the woman of the house that does the cooking is to find recipes the entire family will eat.  I never want to raise kids and talk about "going on a diet".  I want to share with them and you as well how to create a lifestyle.  I will be starting a new workout program from Shawn T as well, called Cize.  It is designed for 30 days to have fun while sweating!!  From the 30 day workout program you can continue on for the more advanced dance moves that go with the base of moves you already learned the first 30 days.  The workouts last anywhere from 30 to 45 minutes each day along with an ab workout that is intense (I tried it out already) as a mom that has had 3 C-sections this is a good one and plan on using it a few times a week to strength the core muscles.

This program is for those that need low impact maybe your coming out of an injury and have been cleared that you can workout, pregnant (cleared to do light workouts), have high stress at the office and truly you don't want to think while you workout, you enjoy programs like Zumba or dance.  Shawn T changes it up a bit and for sure is much more relaxed while working out with you.  On average most are burning between 350 to 450 calories during the workouts.

This IS NEW!!  And I will be opening up our very first test group!! You will have the chance to earn 500.00 cash from submitting your before and after pictures.  We all start together and finish together.  Oh and we eat pretty good while getting in shape check out this mornings recipe that fits in the meal plan.
Mix Berry Pancakes!!

Cize Test Group

Cize Test Group

Well it’s almost here!!  I’ve had a lot of folks asking what is this Cize workout all about?  And I want you to know when I first heard about it I thought NOPE not happing but I really wanted to say I tried the workout.  Beachbody on demand has allowed access to this program and a workout before it is released.  Over the past 4 weeks I’ve used the workout on my cardio days 2 twice a week.  Let’s just say my dance skills might be like wine it gets better with time.  I’m starting to feel I might not have two left feet and this country girl can have fun while doing cardio and it doesn’t need to be hardcore.

Cize Test Group

Working out to me is a mood setter!!  I enjoy a morning sweat session and sharing with others how to stay accountable while they do so.  This is a workouts designed to “end the trend” or exercising.  Yes we will be working out but instead of push-ups it’s going to be moving your hips.

Cize Test Group

I truly believe this will be a program your kids will want to join you.  My two year old and three year old have enjoyed the music and dancing around the living room in their own rythym.
Cize Test Group

Green Grape and Avocado Quinoa Salad

Green Grape and Avocado Quinoa Salad

It’s been such a full week with moving a family of five and buying our first horse.  I could not be more thrilled to be blogging while the kids play outside and have room to just be kids.  This time last week I was in the middle of packing everything up and trying to make sure everything ran smoothly and then I ended up turning quickly and fractured part of my foot.  A week later and it’s feeling much better not what was in the plans and thankful for family that helped out.  This past Monday I started a five day “Summer Salad” group that is 5 days long.  My amazing coaches put together their favorite recipes and we created this group together.  Amy within our team shared this recipe and I could not wait to try it.  As my sister headed home for a few days she made this recipe for our first family get together at the new house.  Sunday evening with boxes getting put away and beds made we cooked on the grill BBQ Pork (hot dogs for the kids) and lots of fruit and veggies.  The first of many family meals at the new place and this recipe will be served again.

Healthy Eating While Camping

Healthy Eating While Camping

Healthy Eating While Camping

Hey there!!  It’s hard to believe this coming weekend will be Memorial Day weekend for most that means time off of work, relaxing, eating out traveling, weekend cocktails, etc.  You name it healthy eating and exercise will go on the back burner.  My goal as a coach is not only to inspire each of you to make the best choices but to hold myself accountability as well.  The rule for the weekend is 80/20!  I mean let’s face it if we end up with a camp fire in the backyard I will be enjoying a s’more and there isn’t a way to really eat a cleaner version, buy dark chocolate?  You get what I’m saying?  So what about the rest of the meals?  Here are some ideas as you might be looking at today as your Friday and headed to grocery shop for the weekend.

Cup Salad

Make it your way!!  what I like about this idea is the fact that you can make it ahead of time and there will be zero clean up while enjoying your weekend.  If your camping grill some chicken while others make hot dogs and add the chicken to your salad.
Ideas for filling your cup-
celery
radishes
onion
grape tomatoes
chopped broccoli
mushrooms
carrots
hard boiled eggs
snow peas
red and green bell peppers
cheese, crumbled or shredded
cauliflower
cucumbers
sunflower seeds
bacon bits
bean sprouts
pickles
peppers

Side Dish- Corn over the fire

Using the crockpot while enjoying time off-  Soup it is!  It's an easy way to prep ahead and keep on low while family and friends join you around the camp fire.

Here is my all time favorite clean eating soup recipe-
Crockpot Beef Barley

Next up foil wrapped Chicken Fajita
Ingredients:
1-1/2 cups instant brown rice, uncooked
1-1/2 cups hot water
1 Tablespoon of Taco Seasoning
4 small boneless skinless chicken breasts
1 each green and red pepper, cut into strips
1/2 cup Salsa
1/2 cup Shredded Taco Cheese

Directions:
Heat oven to 400ºF.
Fold up all sides of each of 4 large sheets heavy-duty foil to form 1-inch rim; spray with cooking spray. Combine rice, water and taco seasoning; spoon onto foil. Top with remaining ingredients.
Bring up foil sides; fold to make 4 packets. Place in 15x10x1-inch pan.  Bake 30 to 35 min. or until chicken is done (165ºF). Cool 5 min. Cut slits in foil to release steam before opening packets.

These are just a few ideas as the holiday weekend is right around the corner. Happy Camping!!  Hanging in the backyard!  Family, Friends, and good times.

Vegan Shakeology

Vegan Shakeology

What is Vegan Shakeology? Is Shakeology Dairy Free?
Vegan Shakeology Ingredients? Is Vegan Shakeology Gluten Free? List of ingredients? Cost? Recipes?

Hey there!!  These are great questions and in the last week I've been asked so it was time to create a blog post and share the info you've been asking for.

Is Shakeology dairy free?

The Tropical Strawberry and Chocolate Vegan Shakeology are dairy free, Lactose free and soy-free. They contain a new proprietary blend of plant-based proteins. It is ideal for those who cannot tolerate or wish to avoid whey protein. Many people find that a vegan protein is more easily digested by the body than animal protein.  Often times nursing moms find the Vegan option to be helpful.  Vegan shakeology is 100% Plant base-
  •   Maintain a healthy weight
  • Have fewer digestive issues
  • Feel lighter and more energetic

  •

    Vegan Shakeology

    Taste?

    They’re smoother than ever!

And while we beefed up our vegan flavors to make them more delicious to your 10,000 taste buds, we also added GMO-free oat protein to our original vegan protein blend of pea and rice, making the texture and consistency of our vegan shakes incredibly smooth and creamy. Plus, oat protein is a nutritious protein source that’s rich in essential amino acids (including leucine, isoleucine, and lysine). Nevertheless, you can’t go wrong with smooth and healthy.  This information has been pulled directly from the creators of Vegan Shakeology (dated May 27th 2014)

    List of ingredients-

    Vegan Shakeology

Formula updated to help with texture and taste-

Organic Agave Fruit powder is a wholesome, non-GMO, ingredient that imparts a sweet flavor which also contributes prebiotic fiber.  Although Shakeology was originally very low in sugar, this upgrade also lowered both the total sugar content slightly, as well as carbs.  As with most fruit, Agave contains fructose and has the added benefit of being naturally high in inulin, a prebiotic fiber, to support digestive health.  Unlike many of the cheaper sources of agave on the market, that use low quality materials and are enzymatically treated (similar to high fructose corn syrup processing) the organic agave used in Shakeology is naturally extracted without enzymes or chemical additives.

Is Shakeology certified as Gluten Free?

Shakeology is not certified gluten free. Although Shakeology is made with gluten-free ingredients, all Shakeology formulas are in a manufacturing facility that also processes known allergens such as soy, milk, egg, fish, crustacean shellfish, tree nuts, peanuts and wheat (gluten) ingredients. While the manufacturing procedures follows strict, required FDA Good Manufacturing Practices (GMPs), which include immediate cleaning and breaking down of equipment after every production batch and proper air filtration systems as precautionary measures, the possibility of cross-contamination can never be 100% eliminated, therefore we are required by the FDA, to include a warning that addresses this.

Let's talk price!!  I mean sure you can head into your local GNC and pick up some protein shakeology for half the price of shakeology here's the thing you can't feel like a million bucks eating from the dollar menu.  Food in fuel for out bodies putting garbage in will only leave you feeling like crap.  Yes shakeology is a daily investment in your health and up front it seems a bit pricy because your investing in 30 healthy meals with zero clean up, zero waste, zero counting calories or nutrition, the work is already done.  It's a true meal replacement with the proper balance of complex carbs and protein.  In the United States most of use are not protein deficient but lacking nutrition.  So looking at the price of shakeology a few things to keep is not comparing it to a protein shake, no soy, no artificial sweeteners, and artificial flavorings.  This video does a great job adding up all the ways we spend money but can be eliminate in a quest to live a healthier life.

    Shamrock Shakeology Recipe

    Shamrock Shakeology Recipe

As our family rushed around this morning to get the house in order as we get ready for the next phase in life and sell our starter home it hit me.  I wanted a green milk shake from McDonalds you know the one they only have around Saint Patrick’s Day.  So this afternoon I was in search of the next best thing!!  After eating clean for this long YES I still enjoy foods that are not clean however I end up feeling like crap afterwards so I made a shamrock Shakeology instead.

There are many reasons I love shakeology and drink it every day.  One being just this I can have a few flavors on hand and make a new recipe everyday.  Two years later of drinking it everyday I still enjoy it and look at it as a treat not something that is actually fueling my body with great nutrition.  I think one of the set backs as a beachbody coach is when someone says "no thanks I've tried it before".  More then likely if you just mix it up its not going to taste good at all.  I rely on my wonderful Hamilton 15.00 blender every day to blend it up just right.

    Shamrock Shakeology Recipe

    Recipe:
Shamrock Shakeology 8 oz. Milk (I use almond)
    4 oz ice and water
Splash of peppermint extract or mint water
1 tsp. all natural Peanut Butter
1-2 tbsp. vanilla instant pudding mix
1 packet of Greenberry Shakeology or 1 scoop if you buy it by the bag

    Blend and enjoy!!!
So beside making yummy recipes like this one what are the health benefits of drinking shakeology Every day?

Also looking for other fun Recipes

My wonderful sister Jeanette did a great job breaking down the diet cycle we all go through and the benefits that shakeology can offer to eliminate that spiral of two weeks on two weeks off.  Check it out

    Enjoy your Shamrock!!

    Busy mom cooks healthy

Busy mom relies on the crockpot
The moment in the day when I sit at the computer and I wonder if I’m half-crazy or just willing to be a little crazy in order to reach certain goals in life.  Between being a busy mom of three, breastfeeding our newest addition (Henry), working with my husband for our traditional excavation business, selling a home, buying a home, and running an online business based around helping others reach their fitness goals, the days are full!!  I truly feel blessed for each of these areas that has my attention and to be honest this is how my husband and I run life the best at.  Making quick choices, multitasking, delegating, and building dreams.

I put the breaks on and looked at my own health it’s easy to give to others and YES forget about my own health.  My goal this week is to dial in on nutrition I refuse to give into my life being too crazy to not eat healthy.  I’m seven weeks into working out and loving it, yes it’s hard to drag my butt out of bed at 5:00am but I truly use that time to sweat and figure out a game plan for the day.  However exercise is only 20% of weight loss and let’s face it after having a baby weight loss is on my mind.

    Busy mom cooks healthy

I have breakfast down- I drink shakeology every day to not only have the energy to keep up with the taste as hand each day but its quick and I need quick.  Lunch each day is the same salad and each week I just switch up the salad and I also pair it with a sweet potato.  I realize what area of the day I struggle the most with, is dinners.  So my goal this entire week is to hire a cook, AKA I’m pulling out the crockpot and using every night this week for dinner.
    Busy mom cooks healthy
