Chicken Tortilla Soup

 
Chicken Tortilla Soup
 
 
Five minutes before jumping in the shower it's time to create dinner in the crockpot! !
With limited time during the week to cook relying on the crockpot to do the cooking. As well as showing others you can be busy and still create a healthy meal for the family.   Making the most of the 21 day fix!!!
 
 

Ingredients
6 cups of low-sodium vegetable broth [or chicken broth!]
1 cup canned crushed tomatoes...
¼-1/2 cup tomatillo salsa
3 TBSP tomato paste
2 TBSP olive oil
3 cups black beans [cooked or canned]
1-2 cups pinto beans [cooked or canned]
3 boneless, skinless chicken breasts
4 small corn tortillas, torn into small pieces
2 small onions [approx 1 cups]
2 jalapenos
1 large bell pepper
juice of ½ a fresh lime
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
½ tsp cayenne pepper
salt, to taste [amount added will vary on sodium content of broth + tomatoes/beans]
shredded mexican cheese blend
crunchy tortilla chips

...plus add your favorites from the list below:
tons-o-toppings:
greek yogurt
tortilla strips
chopped red onion
chopped green onion
sliced jalapenos
sliced avocado
Directions:
For a brothier soup, keep a bit of extra vegetable or chicken broth on hand to add towards the end. I like my soup hearty and skipped the "soupy" soup this time around!
Instructions
1.Essentially you're going to toss everything in and walk away,
2.Turn your slow cooker to high and add broth, crushed tomatoes, tomato paste, tomatillo salsa, beans and chicken breasts, whole.
3.Next dice your bell pepper, jalapeno, and onion and tear your corn tortilla into small pieces before tossing them into the pot as well. The corn tortillas help the soup to thicken a bit and also act as noodles!
4.Add your seasonings,olive oil, and lime juice + cover.
5.Within a few hours the chicken breasts should be juicy and perfectly cooked, if you happen to be around, feel free to scoop them out with tongs or a fork, place them on a cutting board, and chop each breast into six large pieces. Now it'll shred oh-so-easily! Use two forks to create pulled/shredded chicken and add it back to your slow cooker. If you aren't home yet you can complete this step once you return. No worries!
6.The soup will simmer away on high for four-six hours [total time] and make your kitchen smell absolutely amazing

 Brownie Batter Overnight Oatmeal

I absolutely LOVE this Overnight Oatmeal In A Jar Recipe. It’s so easy to make and the results are delicious. Even if you’re not a fan of oatmeal, you will love this one. It’s creamy, sweet and packed with flavor and texture. Unlike that instant oatmeal they sell at the grocery store.
This is the perfect thing to dig your spoon in. Forget about breakfast, this also works as an afternoon pick me up. Add your favorite toppings and you’re good to go.

1 cup Unsweetened almond milk
1/2 cup lain low fat Greek yogurt (or mashed banana, or pumpkin)
2 tbs Unsweetened cocoa powder
1/8 tspSalt
2 tbs Baking stevia
1 cup Old fashioned oats
Prep time to make this recipe is 5-10 minutes.

Directions:
 

In a small bowl, mix all of the ingredients together. Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour (or more) so the oats soften and absorb the liquid). Top with chopped nuts or topping of choice if desired! Enjoy cold, or microwave for 30-60 seconds to enjoy warm!

Hands do this could not come soon enough!!  Any time you’re pregnant first or third the time after starting to feel human again is priceless.  For me personally the last month of each pregnancy is NOT fun at all and I’m pretty much counting the days down until I can return to feeling like a human again.  It’s hard to believe little Henry is already 19 days old today, the day after having a C-section and your able to get up and take a shower, you start to feel human again.  However the dreaded moment you look in the mirror and see what is left of your body after having a baby.  Yikes!!  After Clint and Josie standing in the bathroom after giving birth was not a good time.  Somehow this pregnancy I was excited!!  It sounds crazy but it was a new project and I was the one working on another transformation.  My entire mission is to inspire and show other woman it can be done.

A little back history on myself after having Josie almost 2 years ago to the day.  I waited my 6 weeks to work out and start right away, I’ve breastfeed each of the kids for the first year and for those moms that say breastfeeding helps with losing the baby weight, hats off to you!!  I just never found the baby weight easy to come off.  With Josie I was working out like crazy and had an upcoming wedding to be in and just felt so uncomfortable in my own skin.  My poor husband wanted to support me and his advice was I need to burn more calories….I thought I was eating pretty good.  I was DEAD tired!!  Long story short after 3 months of trying to loss the weight on my own I joined an online challenge group and really learned more about clean eating, the importance of accountability, replaced one meal a day with shakeology, and started with Chalean Extreme.  At the end of 90 days I felt like my energy was more than I ever felt even before kids.  I was sleeping so much better, my skin was clear, I started to want to share with my family more about what I had learned.  So it was natural to pay it forward and sign up as a coach.  What once was a dark time in my life and I felt hopeless is now a time I use to inspire others.  I want each mom to feel amazing holding their babies and know they too can feel like a million bucks after having kids.

I’m not an expert in nutrition or carry any fancy degree, I’m just a mom on a mission that went off of a gut feeling to help others.  So as my second transformation is starting to unfold I want you to think about your life and a time you truly felt comfortable in your skin, liked what you saw in the mirror, and had energy to keep up with life as the day goes on?  If you could go back there would you invest in yourself and take a leap of faith today?  It can be very scary, if you’re someone like myself I hate to fail at anything and hate to invest in something that doesn’t work. Maybe you had your baby last month or last year, or heck your baby is in high school.  It’s your time!!  My goal for the month is to help woman feel their inner super woman again!!  Turn the winter fluff into fab!!  Mom’s on a budget I got you covered as well!  I’m in the middle of the nitty giddy of a transformation and I invite you to jump in with me.  We start together in an accountability group and we finish together.

Becoming a mother of 3


It’s hard to believe it’s been a full week since coming home with baby number 3 Henry.  I’ve had a lot of messages and questions about the transition from 2 kids to 3 kids ages 3 and under.  Well maybe it’s just my personality but I just tend to go with the flow.  The kids and I tend to be able to change plans or directions at any given moment.  The house is ran with a much laid back feeling, with wiggle room for messes and a not so neat house.  With that being said adding Henry in was just natural, the help from my mom and mother in law has been very helpful with the older two.  Personally going from being a mom of one to adding baby number two in took a good four months to adjust however this adjustments has gone smoothly.



According to the doctor I tend to heal very well from C-sections and need to remind myself to still enjoy these very memorable times without jumping back into the rhythm of life too quickly.  With the daily temperature below zero and snow everyday going out and about with a newborn so far is limited.  However at home the kids have adjusted well. Clint is my big helper for sure and takes the roll of older brother very well.  Josie is doing well and as a mom I tend to notice she needs more snuggles from me when I’m not feeding the baby, she has had more potty accidents with the recent changes at the house however I know over time she will adjust to being a family of five.
 
Jumping back into eating right feels amazing!!  Being pregnant for sure messed with my eating the entire pregnancy most foods turned my stomach, gave heartburn, or had a funny smell.  MY poor husband has been looking forward to a cooking wife again and in the last week of being home with Henry it feels great to be back in action cooking as well.

Headed right back to work also just feels right, I get a lot of fulfillment out of working whether it’s for our traditional business or my beachbody business it’s a sense of having a task at hand and being able to move forward with business.  I know not everyone enjoys the hustle in life however hard work is something that I receive a lot of fulfillment out of.

 


Afternoon cat naps are a must!!  All of the kids where breastfeed and of course Henry is too.  I don’t pump so this momma brings the milk in the middle of the night.  Thankful for a comfy chair for the middle of the nights, shakeology to help with natural energy in the day time, a naps for an added energy boast.  Clint has been one busy big brother, every time Henry woke up the first night home my light sleeper was up also.
He wanted to vacuum, help make lunch, and clean up♡♡

My cat naps for these first few weeks while fully coming around for sure help with finding a new balance and system.


I’m not super woman at all still just or typical person, my husband brought flowers home for Josie and I for Valentine’s day.  I put them in a vase with the packet of stuff to keep them longer and the next day they were DEAD.  Yep I forgot to add the water!!  That’s just one of the crazy things I did over the past seven days home. 
Thankful for a healthy baby boy, the thought of spring coming, a husband that will get groceries, family to call on in a pinch, and the fact that a family of five is making it work in the dead of winter in a house with less than 1,000 sq. ft.

It’s “comfy” for sure!
