Spinach Stuffed Chicken Breast

I was ready to switch things up a bit this week when it came to meal planning.  I was in search of a new family recipe everyone would enjoy.  I'm a mom that also needs recipes the entire family can enjoy.  This one fits the bill!!  Enjoy

If your following the fix this would be:
1 red
1 green
1 blue

Spinach Stuffed Chicken Breast


Ingredients:

1 (10 oz.) package of fresh spinach leaves

½ cup Greek yogurt

 1/2 cup fresh mozzarella  cheese (or cheddar cheese)

4 cloves garlic, minced
 
4 skinless boneless breast halves pounded to 1/2" thick
 
1 pinch of black pepper
 
Directions:
 
 
Preheat the oven to 375 degrees F (190 degrees C).
Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepper fresh mozzarella, and garlic.
 Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach.  Secure with toothpicks, and arrange in a shallow baking dish.
Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C)

If you use cheddar cheese it will hold together a little better then fresh mozzarella.
