Hey There!!  Welcome to my blog where you will find clean eating recipes, motivation, and ways to better your health.  A little bit about myself before we jump into talking about Cize.  I'm a country girl by heart, I live life with a free sprite and run the other way when to much structure is given.  I married my husband 8 years ago we currently have 3 children age 3 and under!!  I've always been driven in life by doing things most see with little opportunity.  In our 20's my husband and I owned a grease collection business and had over 600 locations in the state of Pa to pick up a waste product and turn it into fuel.  We sold the business to a company out of the DC area a little over 2 years ago and continue to be entrepreneurs. 

I came into beachbody 2 years ago just really wanting to lose the baby weight.  I felt defeated and was failing at losing it and my confidence was low.  I wanted to pay it forward and show other woman they too could do this.  So when I look at this picture of these lovely ladies in the first week of the test group working out and sweating for a bigger cause its a pretty cool feeling!  As busy woman I TRULY believe in craving out that daily time to invest mentally and physically into our health.  I swear sweating does a mind good at the same time. 

Let's talk meal plan when it comes to Cize, it uses the same system as the 21 day fix as far as the containers go. This just makes life simple!!  Oh and tasty while getting healthy and losing weight.  Here is an example of what I share within my accountability groups.

I have a few favorite recipes when it comes to this system of meal planning.

In our household my husband would not be thrilled to eat chicken salads every night for dinner so these are just a few ideas on how to keep the family happy while creating a meal plan and not having to cook two dinners.

Before I show you a clip of what the Cize workouts look like I had to share where I spend a good chunk of the day.  Being outdoors with the kids whether its in the barn or the side yard.  So lets just say this workout is stretch for me!!  Give me weight training, running, or 30 minute cardio with at home fitness I'm good.  Cize is cardio but it involves dancing....Perhaps it will be like wine with time it only gets better?

So if you would like to feel more confident in your own skin, shred a few lbs, tone up, do so from at home fitness, give me four weeks of your time with checking in from an online closed facebook group lets chat.  Oh and we eat well also!!  No need to count calories its more so looking at nutrition and picking better options.

It's that time of the week where I sit down and plan out not only goals for the week but also what I will be eating.  Yes I know it kind of sounds crazy but it works.  How many times do you say to yourself this week is going to be better I'm going to set my alarm and wake up early?  Come Tuesday morning the pizza in the lunch room at work gets the best of you!!  I'm not perfect and those slip ups happen.  MY goal is to share with you a way to have a plan but stick to it as best as you can.  It's easy to get down on yourself and feel like you're in a rut!!  I'm here as you coach to shake you and wake you up and focus more on the solution then the problem. 


So the part of the solution is to have a plan, shop for the foods needed, and prep for the week.  As a busy mom and business owner I rely on shakeology for one complete meal a day that helps my general health all around.  With the rising increase in health care and coverage my goal as the woman of the house that does the cooking is to find recipes the entire family will eat.  I never want to raise kids and talk about "going on a diet".  I want to share with them and you as well how to create a lifestyle.  I will be starting a new workout program from Shawn T as well, called Cize.  It is designed for 30 days to have fun while sweating!!  From the 30 day workout program you can continue on for the more advanced dance moves that go with the base of moves you already learned the first 30 days.  The workouts last anywhere from 30 to 45 minutes each day along with an ab workout that is intense (I tried it out already) as a mom that has had 3 C-sections this is a good one and plan on using it a few times a week to strength the core muscles.
 

This program is for those that need low impact maybe your coming out of an injury and have been cleared that you can workout, pregnant (cleared to do light workouts), have high stress at the office and truly you don't want to think while you workout, you enjoy programs like Zumba or dance.  Shawn T changes it up a bit and for sure is much more relaxed while working out with you.  On average most are burning between 350 to 450 calories during the workouts.

Well hello Tuesday already!!  I might be a day late for planning out the week however one day late is better than not planning out the week at all.  I find working out alone is not enough with nutrition being 80% of weight loss having a plan is something I found to be a big part of staying on track.  After giving birth to our third child 2 months ago I’m in the middle of losing the baby weight while breastfeeding.  So yes this is my meal plan and having the evening snack is a must to insure that I’m getting enough calories and nutrition.  For me personally especially while doing Max 30 I find I need a carb in the morning.  I love having a routine so each morning I start by working out at 5:00am no matter what the night was like.  I find by carving out this “me time” I’m a better wife and mother.  From that I make my shakeology for breakfast, get my husband out the door for work, shower, and work my beachbody business checking with challenge groups and coaches, just in time before the kids wake up.  From that I have what I call my morning snack and get the kids their breakfast.  It's official I'm hocked on the Cobb Salad

    This is week 3 in Insanity Max 30 and I’m starting to feel muscles coming back around!  Gosh I love being a mom however getting back into my pre-pregnancy body is important.  I feel more confident, more energy, and more efficient when I invest in a program like Max 30, the 30 minute workouts are SUPER helpful and on the cardio days it’s crazy how many calories I continue to burn after the fact.  The type of training used in this program is designed to do just that no need to spend hours at the gym to see results.  Getting fit at home is so possible and I enjoy helping others do the same.  To learn more about the online accountability groups I run fill out this form.

    Poached Basil and Garlic Salmon

    Insanity Max 30 dinner recipe


    Ingredients:
    8 cups of water
    4 (7 oz.) raw salmon fillets
    1/2 cup of fresh basil (or 2 tsp. of died basil) divided
    2 cloves of chopped garlic
    Fresh lemon juice

    Directions:
    1. Bring water to a boil in a small saucepan over high heat. 
    2. Sprinkle salmon with 1/4 cup of basil: place in boiling water.  Cover immediately and remove from heat.  Poach salmon in hot water for 5 to 7 minutes or until salmon flakes easily when tested with a fork.
    3. Sprinkle salmon with remaining basil and drizzle with lemon juice


    Roasted Cauliflower Mash

    Ingredients:
    4 cups of cauliflower florets, washed, patted dry
    4 tsp. olive oil
    1 tsp. of sea salt
    1/4 tsp. of granulated garlic (optional)
    2 tbsp. low-sodium organic veggie broth

    Directions:
    1. Pre-heat oven to 400 degrees
    2. Place cauliflower on large baking pan.
    3. Drizzle with oil, toss gently t coat, season with salt and garlic (if desired)
    4. Bake, stirring halfway through, for 40 to 45 minutes or until tender
    5. Place in food processor, add veggie broth, pulse until smooth

    Enjoy this meal is wonderful if you have little ones that are not big on eating their veggies.  These homemade cauliflower mash potatoes will help in that area.

    Well let’s just say my day did not go as planned….I ended up getting suck in someone else’s driveway with a crying baby that needed fed and had to call for help.  AKA thank goodness someone could come and rescue me and 3 kid’s middle of the day.  I might have had a small melt down tomorrow is April 1st go away snow!!  However I decided to pull myself together and make the best of this crazy amount of snow that came down today and turn what did not go right into something better.  A NEW RECIPE!!  I’m currently doing Insanity Max 30 however the talk about this 21 day fix extreme meal had my interest so TODAY was the day!!  Family approved!! 
    21 day fix extreme beef stew



    Ingredients-
    1 tsp. olive oil
    1 1/2 lbs raw lean beef stew meat, boneless, cut into 2 inch cubes
    1 medium onion, chopped
    1/2 green bell pepper, chopped
    1/2 red bell pepper, chopped
    4 cloves of garlic, crushed
    2 medium tomatoes, chopped
    1 cup low sodium organic beef broth
    1 bay leaf
    1 tsp. sea salt
    1 tsp. ground black pepper
    2 cups cubed butternut squash
    1/4 cup chopped fresh flat leaf parsley

    21 day fix extreme beef stew

    Directions-
    Heat oil in large saucepan over medium high heat.
    Add beef, cook, stirring frequently, for 4 to 5 minutes, or until beef is brown.
    Add onion and bell peppers; cook stirring frequently for 4 to 5 minutes, or until onion is translucent.  Add garlic, cook stirring frequently for 1 minute.  Add tomatoes, broth, bay leaf, salt, and pepper. Bring to a boil.  Reduce heat to medium - low, cook, covered for 40 minutes. Add squash, cook stirring for 8 to 12 minutes occasionally or until the sauce thickens and beef is fork tender.
    Remove the bay leaf, top with parsley and serve.

    Wanted to share one of my favorite Max 30 and 21 Day Fix approved meals! It's hard to believe I'm able to finally be able to work out after giving birth to our 3rd baby a little over 6 weeks ago.  I've done Insanity in 2013 and had the best ab definition EVER.  However the 60 minute workouts were LONG to commit to.  Introducing Max 30 this past December into beachbody library of DVD's I could not wait to start!!  I might max out very quickly on day one however I'm diving into nutrition as well.  I made this salad twice already and looking forward to using it for the next 60 days and beyond.
    Max 30 Cobb Salad


    Ingredients: 
    1 green of romaine or leaf lettuce

    1 green of tomatoes, bell peppers, cucumbers
     
    1 red of two turkey bacon slices & 1 hard boiled egg

    1 orange of the Dijon Vinaigrette

    1 blue of part avocado

    I keep chopped lettuce, tomatoes and cucumbers in my fridge at all times along with hard boiled eggs. I make a double batch of the dressing too! This is SO quick to whip up and it tastes really good!!!  If your someone that works full time and finds it hard to eat healthy for lunch this is a MUST to add in to your weekly meal plan.  I hope you enjoy it as much as our family has.

    A fun Tuesday afternoon spent with the kids!!  We love being in the kitchen and I love creating these memories together.  Our kids LOVE pizza!!  I’m guessing they are not alone on this however finding a kid friendly version that is easy to eat, healthy, and they enjoy is a win in our house.  I hope your family enjoys this recipe as much as our kids do. 



    Ingredients
    1 medium head cauliflower
    1 egg, slightly beaten
    1 cup Mozzarella cheese, shredded, divided in half
    1/2 cup shredded Parmesan cheese
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1/2 teaspoon Garlic salt

    Directions:

     
    To "rice" the Cauliflower: Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself. One large head should produce approximately 3 cups of riced cauliflower.


    Cheesy Cauliflower Dippers

    Preheat oven to 425 degrees.
     Line a baking sheet with parchment paper and spray it lightly with cooking spray. Spoon the cauliflower mixture onto the pan and use your hands to form it into a 8 1/2 x 11 inch rectangle. Place in the oven for 30 minutes, or even longer until the crust is golden brown and firm. Remove the crust from the oven and top the crust with remaining mozzarella and Parmesan cheeses.
    Return the pan to the oven and bake for another 7-10 minutes, or until the cheese is melted.  Cut into “breadsticks” and serve with warm marinara sauce for dipping.  Makes about 10 breadsticks.  This recipe could easily be doubled

    Cheddar Spinach Egg Muffin

    On Sunday as I opened the fridge I found spinach that needed my attention and by Tuesday would not work well in a salad.  I've been looking for more ideas for snacks that include vegetable as I tend to find it easier to eat fruit.  This recipe rocks!!  I wasn't sure I would like the texture of the muffins being reheated but honestly it was fine and very tasty.  For my recipe I used broccoli, cheddar cheese, spinach, and eggs the combination was just right.

    Cheddar Spinach Egg Muffin
     
     
     
    Makes 12 muffins Ingredients:
     12 eggs (option you could use 24 egg whites)
    1/4cup of almond milk
     Options:
    Baby spinach
    chopped onion
    chopped red pepper
    chopped jalapeno
     broccoli
    chopped mushrooms
     cheddar cheese
    shredded cheese
    sweet onions
     
    Pretty much any vegetables you have on hand
    Directions: 
    -Preheat oven to 350 degrees
    -Choose ingredients you prefer to use and maybe mix it up, so you have something different every day. chop if necessary.
    -Spray pan (olive oil)
    -Add chopped ingredients to each cup
    -beat eggs, add 1/4 cup of almond milk salt and pepper for taste
    -Bake for 30 minutes.
    -Immediately remove and let cool on a rack. Once cool, place 2 in a ziplock bag with no air to keep them all week in the fridge. In the morning, remove from bag and heat in microwave for 30 to 45 seconds and Enjoy!!
